Extraction of Total Anthocyanins from Sicana odorifera Black Peel Fruits Growing in Paraguay for Food Applications

Sicana odorifera is a native fruit of South America large in size. Its dark-colored skin constitutes useful byproduct for obtaining bioactive molecules because it rich polyphenolic compounds, such as anthocyanins. Obtaining appropriate extracts anthocyanins can be multiple applications the food industry or phytopharmaceuticals. In this work, and its peel composition were evaluated, an anthocyanin extraction system was designed optimized, extract obtained characterized. This study provides information obtention anthocyanin-based dye kurugua peel, possibly future natural colorant high-added-value foods due antioxidant characteristics.
